NUTRITIONAL BENEFITS:
Salmon: Rich in protein and omega-3 fatty acids, which are essential for brain development and overall growth in kids.
Miso Paste: A fermented soybean paste adds a unique flavor and is also a good source of probiotics.
Honey or Maple Syrup: Natural sweeteners that are a healthier alternative to granulated sugar, providing antioxidants
Ginger: Known for its anti-inflammatory properties and aids in digestion
Ingredients:
4 salmon fillets (approximately 6 oz each)
3 tablespoons white miso paste
2 tablespoons honey or maple syrup
2 tablespoons mirin
2 tablespoons gluten-free tamari or coconut aminos (soy sauce works too)
1 tablespoon sesame oil
1 teaspoon ginger paste or freshly grated ginger
Thinly sliced scallions, for garnish
Sesame seeds, for garnish
Fresh cilantro leaves, for garnish
Instructions:
Prepare the Miso Glaze: In a small mixing bowl, combine the white miso paste, honey or maple syrup, mirin, gluten-free tamari or coconut aminos, sesame oil, and ginger paste or freshly grated ginger. Whisk the ingredients together until you have a smooth and creamy glaze. Set aside.
Preheat the Oven: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it to prevent the salmon from sticking.
Glaze the Salmon: Place the salmon fillets skin-side down on the prepared baking sheet. Generously brush the miso glaze over each salmon fillet, making sure to coat it evenly.
Bake the Salmon: Transfer the baking sheet to the preheated oven and bake for 12-15 minutes, or until the salmon is cooked through and flakes easily with a fork. While the salmon is baking, you can prepare your garnishes.
Garnish and Serve: Once the salmon is cooked, remove it from the oven and let it rest for a few minutes. Garnish the miso glazed salmon with thinly sliced scallions, sesame seeds, and fresh cilantro leaves. Serve the salmon hot with your favorite side dishes like steamed rice, roasted vegetables, or a fresh salad.
