Sloppy Joe Bowls: A Flavorful Twist on a Classic Favorite

Ingredients:
Sweet Potato Slices:
1 large sweet potato, cut into 1/4 inch slices
1 tablespoon extra virgin olive oil
1 teaspoon kosher salt
Sloppy Joe Mix:
2 tablespoons olive oil
1–2 tablespoons garlic, minced
1/4 cup yellow onion, diced
1/4 cup red onion, diced
1/2 – 1 green bell pepper, diced
½ shredded Carrots
1 pound ground beef
1 teaspoon dijon mustard
1 teaspoon yellow mustard
3 tablespoons ketchup
2 tablespoons soy sauce
1 teaspoon salt
1/4 teaspoon ground black pepper
2 tablespoons tomato paste
1 teaspoon chili powder
1 teaspoon apple cider vinegar
Toppings/Additions:
Dijon mustard
Sliced pickles
Pickled red onions
Instructions:
Preheat your oven to 415°F.
Place the sweet potato slices on a baking sheet, drizzle with olive oil, and sprinkle with salt. Roast in the oven for 10-12 minutes until tender but firm.
In a large cast iron skillet over medium-high heat, add olive oil and sauté garlic until fragrant. Then, add onions and bell pepper, and cook until softened. Add ground beef and cook until no longer pink and has slightly browned. Drain excess grease if necessary.
Add dijon mustard, yellow mustard, ketchup, soy sauce, salt, pepper, tomato paste, chili powder, and apple cider vinegar. Stir well to combine and let simmer until the flavors meld together.
To assemble the bowls, place a few slices of roasted sweet potato in each bowl and spoon the sloppy joe mixture next to it. Top with sliced pickles, pickled onions, and a dollop of dijon mustard.
