Ingredients:

For the Dill Sauce:

  • 1 cup sour cream

  • 2 tablespoons chopped fresh dill

  • 1 Teaspoon Lemon zest

  • 2 tablespoon lemon juice

  • 1 clove garlic, minced

  • 2 tablespoon Olive Oil

  • Salt and pepper to taste

For the Fish:

  • 4 filets of Salmon

  • Salt and pepper to taste

  • 2 tablespoons olive oil

Instructions:

  • Prepare the Dill Sauce: In a small bowl, combine the sour cream, chopped fresh dill, lemon zest, lemon juice, garlic and olive oil. Season with salt and pepper to taste. Mix well to ensure all the ingredients are incorporated. If the sauce is too thick, you can adjust the consistency by adding a splash of milk. Set the sauce aside for 10 minutes to allow the flavors to meld. If using fresh garlic, set aside for 20 minutes to mellow its flavor.

  • Prepare the Fish: Pat the fish filets dry with a paper towel to remove any excess moisture. Season both sides of the filets with salt and pepper.

  • Cook the Fish: Heat the olive oil in a skillet over medium-high heat. Once the oil is hot, carefully place the fish filets in the skillet, skin side down. Cook for about 2 minutes, or until the skin is golden and crispy. Gently flip the filets and cook for an additional 1 1/2 minutes, or until the fish is cooked through and flakes easily with a fork.

  • Serve: Transfer the cooked fish filets to serving plates. Serve with the prepared Dill Sauce on the side, allowing each diner to drizzle the sauce over their fish as desired. For an extra touch of freshness and presentation, garnish with additional fresh dill and lemon wedges.

Recipe Notes:

  • Don't skip the step of patting the fish dry before cooking. Removing excess moisture ensures that the fish develops a nice sear and prevents it from becoming soggy.

  • If you prefer a stronger garlic flavor in the Dill Sauce, you can mince the garlic ahead of time and let it sit for 10-20 minutes before adding it to the sauce. This helps mellow the sharpness of the garlic.

  • Feel free to adjust the tartness of the Dill Sauce to your liking by adding more or less lemon juice.

  • Serve this dish alongside your favorite side dishes, such as steamed vegetables, roasted potatoes, or a fresh salad, for a complete meal.
