Creamy Avocado Egg Salad

Ingredients:
1 ripe avocado
4 eggs
1 tsp dijon mustard
A handful of dill (adjust to taste)
A handful of parsley (adjust to taste)
Juice of 1/2 lemon
Salt and pepper to taste
A drizzle of olive oil (as needed)

Instructions:
Prepare the Eggs: Start by hard-boiling the eggs. Place the eggs in a saucepan and cover them with water. Bring the water to a boil, then turn off the heat and let the eggs rest (covered) for 8-10 minutes. Afterward, run the eggs under cold water and carefully remove the shells. Cut the eggs into small pieces and set them aside.
Mash the Avocado: While the eggs are cooling, prepare the avocado. Cut the avocado in half, remove the pit, and scoop the flesh into a bowl. Mash the avocado using the back of a large wooden spoon until it reaches a mostly smooth consistency.
Mix and Serve: Once the avocado is mashed, add the chopped eggs to the bowl. Finely chop the dill and parsley, then add them to the mixture along with the lemon juice and a pinch of salt. If the mixture seems too thick, you can add a drizzle of olive oil to loosen it up.
Serve: Mix all the ingredients together until well combined. You can serve the avocado egg salad immediately at room temperature for a comforting and satisfying meal, or chill it in the refrigerator for a refreshing option on warmer days.
