Ingredients:
10 medjool dates
2 tablespoons peanut butter
¼ cup chopped or crushed peanuts
½ cup chocolate chunks or chocolate chips of your choice
1 teaspoon coconut oil
Instructions:
Remove the pits from the medjool dates by making a lengthwise slit with a knife.
Fill each date with peanut butter and sprinkle chopped peanuts on top.
Melt the chocolate and coconut oil together in the microwave in short intervals, stirring in between until smooth. Stove top is fine too!
Dip each stuffed date into the melted chocolate, coating it completely.
Place the chocolate-coated dates on a parchment-lined baking sheet and refrigerate for 15-20 minutes until the chocolate sets.
Serve and enjoy these delicious snacks with your young athlete!
